02The evening
Five moments between the door opening and the last glass. We keep the order the same every night, because it works.
6:00 pm · Doors
The oven has been lit since two, so by six the whole room holds the heat. Someone takes your coat, someone puts a cold glass in your hand, and nobody asks about a booking until you are sitting down.
6:20 pm · Bread
Sourdough baked in last night's heat, with cultured butter that has been out of the fridge long enough to spread. Ask for more. We do not count.
7:15 pm · From the fire
Lamb shoulder after twelve hours. A flounder, four minutes a side. Pumpkin roasted whole in the embers. Plates go to the middle of the table when they are ready, not in courses, and the table works it out.
9:00 pm · Sweet
Basque cheesecake, warm from the oven's fading heat. Stone fruit with honey and ricotta. Dark chocolate, olive oil and salt: three things, and that is the whole dessert.
11:30 pm · Last drinks
A smoked negroni, a half litre of something red, or a pot of tea nobody asked for. The fire sinks to coals, the tram stops out the front, and we lock up when you are ready. Sundays, we stop at ten.

04The room
We cook what arrived that morning in an oven that takes four hours to get right, which is why we do not open for lunch. Twelve seats means we know your name by the second visit, and that you do not like coriander.

A regular, allegedly
06Visit
Last seating 9:30. We hold tables ten minutes past the time you book.
Tram 11 to stop 24, then a short walk. Bikes out the front, cars somewhere else.
For groups over six, private hire, or to tell us about an allergy before you arrive, email is best. We read it between services.
07Book
When, how many, who, and how to reach you. If you are running late, ring and we will hold the table longer. With twelve seats, one empty chair is a lot.
